share the recipe, so, here is my quick and easy, tasty and effective, triple chocolate, lemon and hash cake recipe. It really is easy and shouldnt take much more than an hour all in all.
This will make about 20 medium cupcakes, or a 2 layer 9" cake. I usually make 10 straight cupcakes and 10 space, using about 2g of good quality home-made (organic, locally produced!) hash in ten cakes, so if you want to do 20 space or a large cake, use 4g ish.
1 cupcake is a mellow dose for light or non-smokers, 2 if you want to feel it, 3 if you really want to feel it or if you have trouble sleeping, 4 if you've no self control.
200g caster sugar112g plain flour35g best quality cocoa powder (not drinking chocolate)6 ish squares/ 1/2 bar of grated chocolate - milk or plain, galaxy works nicely1 flat teaspoon of baking powder1 flat teaspoon of bicarbonate of soda1/2 teaspoon salt1 egg125ml milk25ml vegetable oil35g butter1 teaspoon vanilla extract100ml boiling water (maybe not all of it, judge how runny it is)
Cook on 180C but dont turn the oven on until it's all mixed.
1. Sieve all the dry ingredients (caster sugar, plain flour, cocoa powder, baking powder, bicarb, salt) and mix well.
2. Mix in the butter, using your hands, try and mix out any butter lumps but dont worry too much if you have an electric mixer to use later.
3. Then mix the egg and Milk together, and gradually add to them to the mixture.
4. Add oil and vanilla, using an electric mixer for about a minute.
5. Then add the water, somewhere between 50 and 100ml, the mixture is very runny for a cake as it's meant to be moist, but be careful you dont add too much water (or the cakes will stick, which doesnt matter so much with cupcakes I suppose) keep using the electric mixer to blend.
6. If you're making half and half, split the mixture now.
7. Finally, add the hash and mix well for about 2 minutes. Make sure you get the hash as powdery as possible before you add it, I used a pestle and mortar and . You could probably use oil too, but adjust the dose accordingly.
8. Leave the mixture to sit, while you turn the oven on and wait for it to heat up to 180c. I usually go roll a doob.
9. When the oven is hot, mix it all up again with the electric mixer for about a minute. Then pour the mixture into cupcake cases, about 2 level dessert spoons per case. Cook for between 10-15 mins, while you smoke the doob you rolled in 8.
10. Use a cake-tester/metal kebab scewer/fork to test, if it comes out clean they're ready. Stick them somewhere to cool and perhaps go have another doob/brew until they're cool enough to ice.
The next part is not essential, so you could eat them now, but the next bit does make them a lot tastier, especially if you dont want to particularly taste the hash.
11. Mix 40g butter, 80g sieved icing sugar and a bar melted bar of chocolate or 1 tablespoon of sieved cocoa powder and 1/2 teaspoon of vanilla extract and mix with a spoon. If using cocoa powder, also add 1/2 tablespoon of milk, adding gradually as you might not need all the milk. You shouldnt need milk with the melted chocolate, but if it looks too stiff, put some in to soften. Then use the electric mixer until its light and fluffy and not too runny.
12. Stick a dollop of lemon curd, about a teaspoon, on top of each cake, then a good dollop, a fat dessertspoon or so, of the chocolate buttercream on top of the lemon curd. Add decorations if you so wish.
One of the reasons non-space cakes are also a good idea, is that you will more than likely get the insatiable munchies a couple of hours after eating a couple of these, but might not be in the mood for cooking anything else.
