First risk is going to be government agencies tracking your online data back to your real life identity. Its impossible to eliminate this entirely, the best thing you can do is run a computer with tails as the OS as it means everything will be routed through the tor network, this will mean your IP address will be a lot harder to track back to you also tails has in built Mac address spoofing so it will also mean it will be harder for someone to find your real identity via your mac address. Also don't share any information that may link back to you. When getting paid in BTC make sure you use a wallet that is not related to any of you personal information, also always use a BTC tumbler whenever moving BTC around as BTC transaction log is public so if you don't tumble your coins everyone can see where your sending them and this can be linked back to you. As for shipping, I would suggest vacuum sealing everything in X-ray proof bags. In uk-uk shipping your packages won't get X-rayed but if your sending over seas they might so It doesn't hurt to use them as they also stop any smell aswell. I would also suggest wearing gloves when packaging anything so you don't leave any finger prints behind. Thats the main things I could think of off the top of my head I'm sure there is probably more you could do but that is definitely a good start.

Spend money on a high quality tent, but most importantly a high quality extractor and filtration system. You will have absolutely no issues with smell. Just grow what you honestly need and you shouldn't have problems.
